What skills do employers ask for in Web3 data roles?

SQL and Python are assumed. Beyond that, warehouse and pipeline tooling, and comfort with chain data in its raw form: logs, events and ABIs, and the decoding needed before any of it fits in a table. A query platform such as Dune, or a node provider's API, is usually how that gets done, along with the judgment to tell bots from real users.

Is onchain analytics different from regular data science?

The methods carry over; the data does not behave the same way. Onchain records are public and permanent, but an address is not a person, contracts have to be decoded before they mean anything, and a single user can hold many wallets.
